Good morning! Supposed to get up to 57 degrees today, wohoo!
So food lovers – I am throwing a baby shower for one of my best friends all throughout junior high, high school, college and present day this weekend! Her baby is almost one month old, and is seriously as cute as a little baby button with ruffles. (that’s cute!) I’m co-hosting the shower with another one of my best friends and the new moms’ sister. The menu is:
- Egg Casserole
- Bran muffins
- Fruit Salad
- Chocolate Mayonnaise cake (don’t knock it till you try it, it’s to DIE for!)
- Personalized, iced sugar cookies
- Coffee, juice, refreshments
My duties are to provide the location (my house), the fruit salad and a vegetarian egg casserole option. For the fruit salad, I’m combining strawberries, pineapple, two colors of grapes, mandarin oranges and maybe a handful of marshmallows. The addition of marshmallows to any fruit salad is just a brilliant thing. They soak up all the fruit juices and get really squishy and yummy! I’m also in charge of making a vegetarian egg casserole option. Of all the things I’ve ever made – I’ve never made an egg casserole!! Do any of you have an egg casserole recipe you love? If so, I’d love to see it!
In other baby news, my sister-in-law is pregnant and is about 18 weeks along! She is going to make an amazing mother, and I’m so excited to be an Aunt! Ben was so upset when he realized what his uncle name would be…Uncle Ben…like the rice!
Breakfast today was a repeat of yesterday’s oatmeal recipe. Busted! It is honestly so good, I had to have it again 😀
On tap for lunch is another sampler platter of a key lime pie yogurt (yes, I love the lemon and lime flavors!), some red grapes that I forgot I had bought (score!) and a peanut butter cookie Lara Bar. This is the only Lara Bar that I haven’t tried yet, and I just found it at my local grocery store – sweet! So excited to try it!
