Today went FAST – I was so busy all day. Around 1:30 I assessed the situation and realized that I had literally been staring at my computer since 7:30…blech. Ben came and got me, and we got pops together at a gas station near both of our jobs. It was a nice little break. 🙂 Then it was back to the grind!!
When I finally left, I couldn’t wait to hit the trail! The sky was pretty grey and it looked like it might rain, but I headed out anyways. It was super muggy and hot…perfect for a nice “work up a sweat” workout!! It was kind of misting for my whole run and then around the last mile, the mist turned to a drizzle, which turned into a sprinkle, but I made it home and the skies cleared before it turned into a down pour, thankfully!
Today I was slated to run 4.25 miles, but given the fact that my morning mom walk was canceled and I literally sat on my butt for 8 hours (ahhh the joys of being an adult) I decided to tack on an extra mile or so and went 5.15 miles. You’ll often see mileage from me in the following amounts: 3, 4.25 and 5.15. That’s because I know of three perfect half-way points on my trail that give me a total mileage of 3, 4.25 or 5.15! Nice!! Updated stats:
- Monday: 5 mile run
- Tuesday: 10×400 5K pace
- Wednesday: 5.15 miles
- Thursday: 4.25 mile run + strength
- Friday: 3 mile run
- Saturday: rest
- Sunday: strength
Tonight Ben and I went on a trip. We went south of the border and had Taco Salads!! A taco salad is basically a fabulous vehicle for copious amounts of delicious, delicious toppings – love that!!! Topping choices tonight included:
- Lean ground beef with taco seasonings
- Fresh, vine-ripened tomates
- Black beans
- Corn on the cob…off the cob!
- Diced jalapenos (Ben put 9 whole slices on his salad!!!!)
- Cheddar Cheese
I piled these babies up on a bed of mixed greens and snap peas and… devoured it!!!
I just love taco salads – who wouldn’t? And by making it at home you avoid that tempting fried taco shell that most restaurant taco salads are served in. Trust me, those things are impossible to resist!!
I also baked up a couple of corn tortillas in the oven at 350 for about 8 minutes, for Ben to crumble on top of his salad. He gave me a couple of pieces – awesome!
I just love how colorful this salad is. It makes it fun to eat with your mouth and eyes!!
Well I’m going to go relax for the night…LOST finale is on!!!! I’ve been semi-confused for the past couple of episodes. I hope tonight doesn’t leave me even more confused…
So tonight on my run I passed by tons of people on the trail. Most gave the wave or nod and smile – one guy even shouted at the top of his lungs “I hate running!!” as he passed by…he had his headphones on and I don’t think he knew how loud he shouted…it was hilarious. My question is – do you give the courtesy nod and wave to your fellow runners, bikers and/or roller bladers? Or do you keep your head down? I’m a nod and smile kind of woman!!
