Morning all! This week is flying – can you believe it’s Wednesday already?! I have zippo plans for the weekend either. A free weekend all for me? I’ll take it!
So this morning my Mom brought me some almond flavored coffee that she got from her friend (shout out to Polly!) and OMG it tasted just like a Dutch Letter! You all know my love for Dutch pastries… Well, I was so inspired drinking the coffee, that I wanted to continue my almond flavor experience. So I made Almond Apricot Oatmeal!
In my bowl:
- 1/2 cup each of oats, water & skim milk
- dash of cinnamon
- capful of almond extract
- 1 medium banana
- 4 dried apricots
- 2 T unsulphured coconut shreds
- sugar free syrup
I’ve said it before and I’ll say it again – almond extract is where it’s at!! When combined with the creamy sweet oats, it makes my bowl taste like a giant Dutch Letter…I’m ok with that!!
Dried apricots are also where it’s at. They are so addicting…

Now, for lunch I packed:
- Leftover Grilled Chicken with Pineapple Pico de Gallo and Cilantro Rice
- Honey Oikos
I feel like there should be a better word for leftovers…that word rarely does whatever it is you’re eating justice. It’s got a slightly negative connotation, but leftovers can be great! How about “delicious eats from previous meals”?? Anyone? Bueller? Yeah, it doesn’t really roll off the tongue like “leftovers”…ah well.

This will be my first try of the Honey flavored Oikos!
Oh – my verdict on the Blueberry Oikos? LOVED IT! The blueberries were extremely fresh tasting – not like some of those “fake” tasting blueberry yogurts, you know what I mean? I am really looking forward to trying the Honey one today!!
So, did anyone happen to catch Will Farrell on Man vs Wild last night? #1: I am in love with Bear Grylls. Always have, always will. #2: Will Farrell is so hysterical…this was an awesome show!!
My question is: Would you rather be a famous movie star living in the lap of luxury, or an outdoor adventurer/explorer?
Me? Mmmm…toughie, but I’m going to have to go with outdoor explorer. Personally, I’d rather have the experience of seeing the world and pushing myself to the limits then living the pampered life. Although…those regular spa visits sure would be nice…:D
