Since it’s Friday, I decided to take a little more time on breakfast, and my morning. So at a leisurely Friday pace, I made Scrambled Eggs and Toast!
My eggs had:
- 1 whole egg
- 2 egg whites
- splash of water
There’s something about having eggs on a weekday that makes me feel like I’m cheating. Like – “Muwahahahaha – there’s only time for eggs on the weekends, but look at me! I’m eating them on a work day!” I like that feeling – take that, pesky work week!
I served it with 2 slices of whole wheat toast smeared with sweet, black berry jam. Told you I have to have something sweet with every meal!
Usually I’m a raspberry jam kind of gal – but I decided to switch it up today. I’m glad I did, because I totally dug this flavor!
Now, for lunch I’m trying something new…and I’m pretty excited about it. It’s a Buffalo Baked Potato!
Take half of a gigantic baked potato…
Add some ooey-gooey mozzarella cheese…
Microwave and top with some Frank’s Buffalo Hot Sauce which is OH-so-delicious with a tangy, spicy kick!
I literally can’t.wait. for this – it’s going to be so delish!
To combat the heat from the Buffalo Baked Potato, I packed a cool, sweet and tropical mango:
Do you guys like mangoes? I think they might be my favorite fruit!! Yep, I said it!
Pretty fun eats for today. A trip from the usual for sure 🙂
Speaking of trips from the usual – today I had coffee with George “Machine Gun” Kelly…kind of. When Ben and I went to Alcatraz in early March, P.B. (pre blog) 🙂 the only thing he asked for was a Machine Gun Kelly mug. Yes, that’s a true fact. The man doesn’t even drink hot liquids…why would he need a mug? Anyways, who am I to deny this one little request? Therefore, I present to you George “Machine Gun” Kelly, in mug form!
