This is going to be a quick one because I’m off to support my man and watch him play intramural softball!
Tonight I whipped up one of my favorite go-to meals – Taco Salads!
My taco salad had:
- Mixed greens
- 93% lean ground beef + taco seasonings
- Taco seasoned shredded cheese
- Chopped raw broccoli
- 3 baby Campari tomatoes
- Drizzle of ranch dressing
It doesn’t look like it – but I promise there’s taco meat in there…

What a fabulous way to get a nice, big serving of veggies but also have it taste a little more exciting than your everyday salad!
The ranch kind of takes the place of “sour cream” for me 🙂 I don’t even want to tell you how much ranch dressing I used to eat in college…it would frighten you. It frightens me…!
This was light and satisfying – just perfect for sitting in the stands rooting for Ben! 8)

What’s something you used to eat that looking back now, you’re slightly appalled at?
In addition to the copious amounts of ranch I used to eat in college, there was a period of time in highschool where…get ready for this…I had a Twinkie and a regular Coke for my afterschool snack everyday!!! Like…what the h8ll was I thinking?! I didn’t gain weight because I danced at a studio 3 days a week and practiced on my school’s dance team 5 mornings a week, so I guess it just never occured to me that maybe that snack wasn’t the best decision ever?! Ugh!
