Good morning all! It’s the last day of my work week today – hooray!
I’ve got a lot of stuff to wrap up before we head out for the long weekend, so I fueled up this morning with an Egg, English Muffin & Fruit breakfast!
First I whisked up 1 whole egg + 2 egg whites with some S&P. While those scrambled, I toasted up an english muffin and topped one half with blackberry jam and the other half with peanut butter.
Everytime I eat an english muffin, I’m reminded of how much more substantial they seem than just regular toast…you know what I mean? Oh, by the way, I use Lakeland 100% Whole Wheat English Muffins. They are great!
I added one plum in for good measure (and for deliciousness) and called it a meal!
Oh also – can I just remind you all of how delicious that Chocolate Peanut Butter coffee is?? I was sitting in my kitchen waiting for my mom this morning (to go on our walk) and while it was brewing I literally wanted to eat my coffee pot…it smelled so good!! I’m almost out too…it may be time to re-order!
For lunch today, I made a repeater of last night’s salad – a Taco Salad. I could have froze the leftover taco meat (which freezes very well, btw) but dangit, that was a really good salad! The mix was exactly the same as last night, minus tomatoes because I didn’t feel like cutting any up this morning 🙂
Whenever I have a creamy dressing for a salad, I pack it in a small ziploc bag instead of a small tupperware container. When I’m ready to eat, I just snip off a corner of the bag and squeeze!
I also packed a crispy Braeburn apple, which has been missing from my life the past few days – oh how I have missed it!
You guys, last night I was cracking up at all of the “less than stellar” choices we used to make…I actually said a few “ohhh yeah, me too!” to several of them! The important thing is that we’ve moved on and are now making healthier decisions in our lives!

My answers:
1. I am most proud of the fact that I have incorporated running into my everyday life. When I left college I could maybe run 2 miles. Maybe. I had danced my entire life, played soccer, etc, but had never ever been a runner. When I moved to Minneapolis and began sloooowly introducing running into my life, I never thought I’d be able to run a half marathon someday and have it become part of my everyday life!
2. Mine are: 1. Learn Japanese. ps do you know how expensive Rosetta Stone is?? 2. Take time off of work before I retire to travel. 3. Learn how to surf 8)
3. Christmas! I love everything about it – the music, the lights, the good cheer, time spent with family – I could go on forever 🙂

1. drinking immense amounts of water each and every day. and really, just working out in general. I got started because i felt like i needed something to do besides just hang out, and now working out is a part of my life and i enjoy being healthy and strong!
2. 1. sky dive. 2. go to australia and new zealand baby! sydney has got to be my dream city (city right by the water). 3. vip tickets to see nickelback & meet them.
3. 4th of july, Seriously! i love the 4th. it’s just a time to chill out and hang out with family and celebrate the good old U.S. of A! plus it’s in the same month of my birthday, so it just tells me there’s only 19 days left!
1. What healthy habit have you incorporated into your life that you are most proud of?
Running! Just lately, I’ve taken up running. It’s something I swore up and down that I would never be able to do In the just a few weeks time I’ve gone from not being able to run a continuous 1/2 mile to last night running 2 miles continously. It’s so cool to me. 🙂
2. What are three things on your “bucket list”?
To hold a baby gorilla. To live in another country for a short time. To become part of an organization that fights and addresses obesity in children.
3. What’s your favorite holiday?
Christmas!
1. I am also most proud of the fact that I’ve become a runner. I rarely exercised at all when I was in HS/College. Then when I moved to Minneapolis, I got into running and shocked my family by running the TC marathon in 2006. I was the least likely to do something like that! I stopped running when I was in grad school, but started back up in May – feels so good to be back!!
2. Bucket list: 1. Learn French 2. Go back to Australia & New Zealand and re-visit all the places I saw when I studied abroad 3. Run another marathon and make my goal time of 4:30.
3. I’m w/ you in Christmas. Love the festive spirit that seems to be contagious. And I love the snow, actually! I can’t imagine having a Christmas without snow!

Running. I am so proud that I am training for a marathon, something that I would have imagined impossible in my Honey Bun days.
2. What are three things on your “bucket list”?
Travel to Europe, own my own business and cheesy, but find the love of my life.

Christmas. I love all the parties and the green, the red and the fam!

1. Running + yoga! I was never a runner either so the fact that I can run more than 1 mile still amazes me.
2. Travel everywhere, learn how to play guitar, have lots of babies.
3. Thanksgiving! it’s my favorite.
1. Eating oatmeal – honestly. I used to eat such sugary sweet cereal and then be hungry two hours later. Now I’m good for nearly 4 hours!
2. I want to get published, do something that combines food and creativity (whatever that may be) and help people as much as I can.
3. I think I like Christmas best. Maybe it’s because I get 2 weeks off from work though?
1. Exercising consistently and eating more healthy foods.
2. My fiance and I have a top 50 list of places that we want to travel to, have children and be the best wife and mother, make a difference in my community
3. All of them!
1. Finally giving up meat. Not because I think everyone should but because I’ve never liked it but I always ate it so people wouldn’t think I was “weird”. I’m so glad I let go of that worry and did what made me happy.
2. Travel to Europe. Fall in love with a man in Europe (even if he doens’t love me back, lol). Skydive. Travel to Africa.
3. Does my birthday count? I keed. Probably 4th of July because it’s in the summer.
I love Three Q Thursday – you always ask such good ones!
1. Kicking my pregnancy habit of having dessert after every meal:) I mean REAL dessert (ice cream, cookie, etc.) Now I still splurge on something sweet – but make better choices like sugar free jello pudding or a creamy yogurt or fruit or something.
2. This is hard. I guess I don’t think this way…hmmm…Visit as many tropical islands as humanly possible:) Own a vacation home someday, and lose my baby weight! ha ha!
3. Valentine’s Day. Not for the romantic side. But I just love the family traditions I had with it growing up. A new swim suit for spring break from mom, chocolate from dad. A little party in our Valentine’s Day PJs and a heart shaped homemade chocolate cake made by my mom. The best ever! I clearly plan on mimicking this with Mason someday!
1. Exercising on a regular basis. I never did anything in HS/College–no sports, no nothing! And since I have gotten married I have changed all that.
2. 1) I have a goal of making it to all 50 states–I only have 9 left! 2) Play in the World Series of Poker 3) Take a cruise through the Mediterranean and visit Greece and the Greek islands.
3. The Fourth of July! It also happens to be my birthday and it is so nice to always have the day off work and be able to relax with friends and family. And of course Fireworks–I just love them!
1. Running! Can’t imagine my life without it now!!
2. Run a marathon, live somewhere in the mountians or by the beach, buy a wakeboarding boat once I finish school!
3. Christmas! It’s my birthday too so it’s like a double holiday!
#s 1 and 2 are too complex for me to come up with solid answers, but I couldn’t resist replying with an answer for #3 anyway 😉 !!

Also, Kristin, I was just wondering, what brand of peanut butter do you use?
I actually don’t eat a ton of peanut butter, so this is what I bought for Ben – which is Naturally JIF. Usually I’m eating almond butter (Barney Butter)…mmmMMM!
1. Consciously looking at the nutritional fact of the food I eat, whether it be bad food or good food.
2. Make it over seas to somewhere like Paris etc. It used to be go to California, but accomplished that last year 🙂
3. Favorite Holiday has to be Christmas! It’s like being at Disney for a whole month! And my house is always a happy place during that time 🙂
(1) Becoming a runner – it wasn’t always easy but now I LOVE it and am training for a marathon! I seriously never thought that would happen!
(2) Swim with dolphins. Travel to every country in the world. Become fluent in Spanish.
(3) Christmas for all the obv reasons. It’s just a cheery time of year – plus its close to my birthday!
1. Two things: Drink more water everyday, and follow my budget as closely as possible. I’ve discovered that when I get headaches, it’s usually because I’m dehydrated – so I always drink water before I turn to OTC painkillers. Headache almost always goes away with big glass of H2O! As for the budget, I consider it a healthy habit because it reduces mental/physical stress. 🙂
2. Learn to speak Italian. Publish a book. Be my own full-time boss someday. (Oh, and like Whit, find the love of my life!)
3. Thanksgiving. All the wonderful spirit, gratitude for our blessings and family togetherness of Christmas, minus the commercial pressures. (And of course, great food.) I love it!
1. Habit: I started running in May, but 2 weeks into it I developed a stress fracture in my leg. Bummer! So, my biggest recent accomplishment is giving up soda. I haven’t had a carbonated beverage of any sort since February! I took note of your post the other day with the “Don’t drink dessert” tip. That advice will keep me motivated.
2. Bucket List: 1) Visit all 50 states 2) Travel to Egypt 3) Pay off my mortgage. Maybe #3 will help #1 & #2 happen!
3. Holiday: Either Christmas or 4th of July. I love the giving spirit around Christmas, but we actually have more long-standing traditions for 4th of July than any other holiday. And I’ll take summer over winter any day.

Sass here with another question for you: do you always cook dinner for both you and your husband or do you sometimes make him something different? I find when I’m trying to go low carb or feel like not eating meat for dinner, the bf needs MORE. Like if I say, let’s have a chicken salad, he’s like “and what else?” Some nights I’d love to say “eat whatever you want. i’m making a salad.” but i know he enjoys making and eating dinner together. Any ideas?

I make one meal and if he’s not digging it – then he’ll usually have it least a little, and then make something else for himself. If I’m wanting to go vegetarian for the night, then I might cook up a chicken breast or something for him to have along with our dinner – but I have a strict policy of only preparing one meal a night! With that said – Ben’s a very good eater and will usually have whatever I make him!

English Muffins are awesome. Have you tried the Thomas’s Double Fiber Honey Wheat? They are amazing, trust me on this. Wait, did I alreday tell you that? 🙂
The Rosetta Stone is pretty expensive. I think it’s around $300. I am actually in the processing of testing some self-study spanish courses for my job and I just purchased Visual Link. It looks pretty good, but I will let you know. Oh, they do have Japanese too!

1. I am most proud of my running. For the first 20 years of my life I though I was “not made to be a runner.” Now I run 30+ miles a week, and I’ve never felt better:)

1. I am most happy about having incorporated running into my life. My Dad was a runner and I always thought he was nuts and said I would only ever run if I was being chased. Well, here I am now training for a half marathon! I have been running for a little over a year and love it!
2. What are three things on your “bucket list”? My bucket list: 1. Run a marathon 2. Learn to speak another language fluently 3. Learn to swim (not as in I can’t swim at all, I am just horrible at it). I would like to learn how to use it as exercise efficiently. 😉
