Here are my reviews (click on any photo to make it larger):

Potato & Chive: Lightly salted with a great chive-y taste. These are great straight out of the bag, or would be super tasty crumbled over a salad.

Cinnamon: Oh yummy. These are like the chip version of sweet potato fries! The light salt flavor hits you first, followed up by a sweet, hint of cinnamon.



Lime: More please! With just a hint of lime, these would be really good a margarita or just straight out of the bag. Probably my favorite of all four varieties!

Yellow Corn: The quintessential salsa dipping chip. This is much lighter than any other corn tortilla chip that’s on the market. Super crispy and the perfect dipping chip if I ever saw one!

What I love most about these chips is the absence of that greasy, queasy, “what did I just eat” feeling that you get from eating other supermarket chips. They’re a snack that I can feel good about reaching for – which is hard to find! Plus, each chip flavor is made in its own little unique shape…how fun 🙂

Ahhhhh I am so reeeelaaaaxed right now!

Dinner + Pedicures with my Mom was a success! First: dinner. We went to a restaurant we’ve both been wanting to try for awhile – RedRossa!

REDROSSA creates individual size, specialty hand-made pizzas, salads and desserts from the freshest ingredients, based upon authentic Italian recipes. Each pizza is handcrafted, then fast-baked in a traditional wood-burning oven. At REDROSSA, we guarantee pizza that’s Fast, Fresh and Authentic.

Basically – it’s handmade, personal size, Napoli style pizzas made with fresh dough and toppings, then baked to perfection in a wood burning oven. This was FAST and this was DELICIOUS! My Mom and I decided to both order a different pizza and split them – works for me! 😀 I got the basic Pizza Margarita and added some Artichoke Hearts and Prosciutto.



Mmmm – the tangy artichokes and salty, whisper-thin prosciutto slices were so delicious with the fresh mozzarella.


The pizza was perfectly thin and crispy – but the crust was pillowy soft and perfectly chewy…mmmm my kind of crust 😀


Momsie got the Roman Pizza with olives, mushrooms, roasted garlic, tomatoes, peppers & two types of cheeses.



This was fabulous too! Feta makes everything beta!


We each had 4 pieces…a bit excessive – but totally worth it. We will definitely be back to RedRossa!

After we had our fill of pizza, it was time. Time for PEDICURES! I honestly don’t know of many other things that are as relaxing as pedicures. I almost fell asleep on multiple occasions, as my tired calves, heels and bunions (HA just kidding!!) were rubbed to melty perfection. The fact that I got to spend some quality time with my Mom made it even better. What color did I get?? Check it out!


Pink, of course! My toes are a little indented in this picture due to the toe separators that I had on for about an hour (hey – I don’t pay for smudges!!) but overall I am very pleased. I LOVE bright colors on my toes!

Hey, hey – happy Wednesday to ya!

This morning I worked out when I woke up! I warmed up with the standard 1.5 mile Mom walk, then ran the same course 2 additional times. GOSH that route is hard to run! It’s super hilly and great for walking when I tend to want a more challenging course, but holy moly it is tough to run. It’s good for the abs (and buns!) though – they are always sore after running hills – yes!

Per my insane hunger levels last time I worked out in the morning, I loaded up on breakfast with a Bacon, Egg & Cheese English Muffin!


No greasy, nastiness here though. I used a whole wheat English Muffin, some center-cut, low-sodium bacon and 3 egg whites!


Seriously – nothing is tastier and more satisfying than this combo of flavors. Nothing, I tell you!


I also had a sliced White Peach:



And some sweet, mouth-watering Cantaloupe.


I ate my cantaloupe very slowly because this is seriously the best one I’ve ever had. It’s definitely cantaloupe season, my friends – stock up while you still can!


For lunch I was feeling a little saucy, so I packed a Fiesta Salad.


In the mix:

  • Mixed greens
  • Black beans
  • Baby corn
  • Dried cranberries
  • Taco seasoned shredded cheese
  • Salsa + a dallop of ranch dressing


I had really wanted some fresh tomatoes for this baby, but I didn’t have any on hand. Dried cranberries make a nice sub though, right?


I also packed a banana – because they’re not just for oatmeal…you know?


I’m thinking I met my fruit quota for the day…what do you think?!

So, you guys, I’m very excited for tonight, because tonight = dinner + pedicures (not at the same time) with my Mom! Yep, it’s ladies night! 😀

Goooood evening everyone – one more work and/or school day left – are you so excited?!?! Any great plans for the weekend? There is a ton of stuff going on around here that I’m jazzed about…I’ll keep you up-to-date over the next couple of days!

Ok – one thing about working out when you wake up is that is makes you friggin’ HUNGRY! I practically leapt out of the Dentist’s chair when my exam was over (no cavities!) to race down to my car and eat my breakfast. I gobbled everything down before I even made it to work! When 12:00 came I dove into my salad too – which was super flavorful, btw!

By mid-afternoon I had a craving for a soda, so Ben and I went to a nearby gas station to pick up a few. While we were there, I got some Strawberry Mambas. Remember those? Oh my gosh, I used to get these ALL THE TIME when I was growing up! They are so tasty! What was your favorite candy when you were little?

When I got home from work – I was STILL hungry, so I snacked on a Blueberry PURE bar! I know – two in one day = kind of nutso, but when you look at the nutritionals and the fact that it’s all natural – well, I don’t feel that bad!


This flavor was awesome – with chunks of real, dried blueberries and nuts! One thing I’ve found with PURE bars is that they have an almost buttery, luxurious taste that is really unique – and REALLY delicious!


For dinner I made one of my go-to’s –  Lemon Pepper Chicken with Artichoke Salsa.


I made the artichoke salsa last night (which took about 1.5 minutes), then just sautéed some chicken breasts sprayed with non-stick spray and sprinkled with lemon pepper seasoning on my flat top skillet. While the chicken was cooking, I tossed some fresh asparagus with garlic powder and olive oil, and put them under the broiler for ~8 minutes – stirring half way through.


When everything was cooked, I put some baby spinach on a plate, topped with the asparagus, chicken, artichoke salsa and some freshly chopped tomatoes – and dinner was ready!


I absolutely love the tangy artichokes and capers in this salsa – it goes perfectly with the lemon pepper seasoning.



Plus – look at all the delicious veggies you’re getting with this dish: spinach, asparagus & tomatoes!


I’m trying to make Ben take me out for ice cream this evening – but alas, he is glued to the NBA draft, dang! I may have to take a solo trip…!

p.s. my abs are so sore from my hilly run this morning…I like that!

Hey friendidos!

Last night was great – I cleaned the house from top to bottom, then Ben and I went on a nice, long walk. When we got back it was already 9:00, but you would have never have known it because it was still so light out. Aren’t carefree, Summer evenings one of the best things in life? I happen to think so… 🙂

So, this morning I worked out when I woke up! Since I came home to get some things done after work last night and didn’t get my scheduled 7×400 run done – I woke up early today and ran a 12×400 – or three miles. It was super hot and challenging due to the monster hills on the course I took, but it felt amazing to start my day with a great workout and a hearty sweat. Mmm…TMI?

After my run, I got ready and packed my breakfast and lunch…because I’m off to the dentist! Yep, this lady is due for a checkup – fingers crossed for no cavities. I’ve lasted almost 26 years without any and I’d hate to start now!

For breakfast I packed:


 A crispy, Braeburn apple:


Some carrot sticks – random but crunchy and fun:



And an Apple Cinnamon PURE bar!


Let me tell you why I love PURE bars:

  • They are certified organic, raw & vegan
  • Each bar contains 14 essential vitamins and minerals
  • They count as 1 1/2 servings of fruit
  • I can pronounce every single ingredient
  • The texture of the bar is amazing
  • They are delicious!

Honestly, none of the things I listed above would matter to me if this bar didn’t taste great, as I don’t eat things that I don’t like, no matter how “certified” they may be – who’s with me?! I’m excited for the winners of the giveaway to try these!

Alrighty – for lunch I packed a mixed green & vegetable salad with feta cheese, pineapple and mandarin oranges – which are insanely good with this roasted garlic balsamic vinaigrette dressing that I have on hand! Yummmm 😀




And a Lemon Chiffon yogurt!


OH! I need to tell you guys what Dutch Letters are for the people that haven’t heard of them! I guess I didn’t know that not everyone knew what they were – these delicious, treats must be a Midwest thing!!

Dutch letters are a flaky pastry stuffed with an almond flavored filling, topped with big crystal sugar and generally in the shape of a big “S”. They are spectacular in every way and if you’ve never had one, you need to find a way to get one – fast! I ate mine too quickly to get a picture, so here’s one from Kathy McCloy:


Actually, I am feeling SO pumped about these Dutch Letters and the fact that many of you have never even tasted them, let alone HEARD of them – that I’m adding one to the GRAND PRIZE PACKAGE in the Real Simple + PURE Bar Giveaway!! My answers:

1. NO – I LOVE going to the dentist! Few things compare to the feeling of sparkly, clean teeth and, knock on wood, I’ve never had a scary experience there!

2. I’d rather have a voice that makes people calm. There’s this woman at work who’s got the most soothing voice that I could literally listen to all day!

3. As you know, I have irrational levels of arachnophobia (fear of spiders) and ophidiophobia (fear of snakes) – ahh!!!
