Eating well is tough, isn’t it? Eating well, coupled with a major sweet/junk tooth + a curiosity to taste everything = REALLY tough!
I love to cook, and I love to eat even more. I am always down for trying something new (except if it contains mushrooms, bell peppers and/or cooked carrots) and I feel the absolute best when I eat nutritious and healthy meals. With that said, I am definitely a self proclaimed junk food junkie! Give me a bag of Doritos and some Thin Mints any day and a happy girl you will find. Obviously junk food does NOT do a body good, so I try and live by the 80/20 rule: 80% clean, healthy eating, 20% sanity-keeping splurges.
Living in Iowa and eating well has its challenges. Obviously fresh produce is not abundantly available year round so I do my best to take advantage of local farmer’s markets in the summer time and eat seasonally the rest of the year. And while Trader Joes and Whole Foods can’t be found for miles (and miles…and miles…sob!) there are markets with great ingredients popping up slowly and surely.
My favorite foods to cook and eat include Asian foods and “5 ingredients or less” recipes. Food doesn’t have to be complicated to be delicious! Most nights you’ll find me in the kitchen whipping up something that satisfies me and my husband (accommodating some quirky eating rules – me, see above; him, no onions, mayo or mustard) and I may most likely will be eating chocolate.

You sound a lot like me b/c I love eating well but have a serious junk food addiction! How do you find the time and energy to cook and/or work out after a 9-5 day? I struggle with my energy all the time…
