One of my favorite restaurants in Minneapolis is Pizza Luce…they’ve got amazing sandwiches, amazing salads…and amazing PIZZAS! My favorite pizza by far, is the Mashed Potato Pizza. Yes, you read that right – Mashed Potato Pizza!
Pizza crust smothered in buttery-garlic baby red mashed potatoes and topped with broccoli, fresh diced tomatoes, cheddar cheese and a sprinkle of smoked apple hickory bacon. Served with a side of sour cream.
OMG it is to DIE for!!! Lucky for me, tonight I found myself with most of the ingredients to make this delectable pie – so I did!
First I cut and boiled some baby, Yukon gold potatoes. The smaller you cut – the faster they cook!
After the potatoes were fork tender, I mashed them with a little plain Oikos Greek yogurt, skim milk, garlic and onion powder, and S&P. The Oikos gave the potatoes an awesome texture and flavor. If you don’t have any on hand – use some sour cream!
Next I toasted a Flat Out wrap in the oven on broil, for about 3-4 minutes a side. After it was nice and toasty I took it out, slathered on some mashed potatoes and sprinkled some mozzarella cheese and chopped tomatoes on top.
I popped the pizza under the broiler for a few more minutes, topped the whole thing off with some julienned basil and pepper –> PRESTO! Mashed Potato Pizza!!
Ok, so this didn’t have “buttery-garlic” mashed potatoes or smoked bacon – but holy cow, for an at home attempt – this was dy-no-mite! And super easy!
The creamy potatoes with the crunchy wrap made the perfect pizza.
The smell of the basil when it hits the hot pizza is out of this world.
You guys need to try this pizza – I can’t recommend it enough!!

Do you ever try to re-create dishes you’ve had out at restaurants? I always forget to…but I’m glad I didn’t tonight! Ben was so happy (he looooves this pizza too) that he was getting slightly panicky when he was making his because it wasn’t getting done fast enough…patience is a virtue husband!!! ps I’m not kidding when I tell you that he ate his entire pizza in under one and a half minutes…
How do you like your pizza?! Plain? Pepperoni? Veggie? My ideal pie is #1: Mashed Potato Pizza #2: Sauerkraut pizza – IT IS SO GOOD!!!!!
Odd, but it sounds REALLY good! I will have to try it. I usually just load my pizza with veggies! Artichokes and roasted red peppers are my fav!
Oh. my. gosh! That pizza sounds awesome! Mashed potatoes is one of my favorite-est foods. I never thought of putting it on pizza! How could I have never thought of that? I’m totally trying that. Thanks!!!!
I tend to like veggie pizzas. Whatever the veggie….I’m probably going to like it. But I really do like that “greek pizza” I wrote in an earlier comment. Quite tasty and my go-to home pizza.

I’ve never been to Pizza Luce. I’ve had their takeout and wasn’t that impressed. I bet it’s better at the restaurant. I’ve heard of their mashed potato pizza. I don’t know how theirs is, but yours looks great!
I LOVE Pizza Luce. I used to work in a building next door to it in MSP and we ate there all the time. Now, I definitely couldn’t do that anymore, because I am more aware of what I eat, but yum!
And I make homemade pizza for my family all the time based on a pizza that we used to eat in Nebraska. It was a beef and romano cheese pizza, but I make a much lighter crust and cut down on the ingredients yet it tastes better in my opinion.

How do those Flat Out wraps do as a pizza crust? I always have them kicking around, but fear they’d be soggy and limp with pizza toppings on top.

They work fabulously! I would recommend toasting them under the broiler for a few minutes a side before you add your toppings though. We did that and they were perfectly crunchy!
